Pad Thai with raw zucchini carrot noodles

It has been some weeks since my last entry. Many things happend and therefore I couldn`t find any time to post some new food. Yesterday I had again a stressful labor day at university and it was then when I and my labor colleague got hungry. After sharing some sandwiches she told me she loves ginger. So I thought ok, lets try something new with ginger. Todays lunch has following ingredients:Image

  • 1 zucchini
  • 2 carrots
  • 1/2 of red bellpepper
  • black sesame seeds
  • 1/4 cup of freshly squeezed orange juice
  • 4 tablespoon of coconut powder
  • 1/2 cup of roughly chopped coriander
  • Juice of 1 lemon
  • 1/2 cup of chopped spring onion
  • 2 tablespoons of tahini
  • 2 cm piece of ginger, finely chopped
  • 3 leaves of fresh salvia (sage)
  • Some sprouts

Put everything except the zucchini, carrots, bellpepper, black sesame seeds and the sprouts into a blender and blend until it becomes a fine sauce. Add a little salt if you like. Next peel noodles from zucchini and carrots with a peeler or with a peeling machine (you can easily find one on amazon, I bought one from Lurch last week). Cut the bellpepper in thin slices. Mix bellpepper with zucchini/carrot noodles. Spread the sauce on the noodles and stir it carefully. At last sprinkle some black sesame seeds and the sprouts on top. If you need the EXTRA flavour, toast sesame seeds without oil in a pan, until they smell nice. Be careful not to burn them. Hope you will enjoy that!
